Gingerbread Cookies
These are my favourite gingerbread cookies, great flavour, and not dark. Recipe makes around 50 small gingerbread men cookies.
Ingredients
105g caster sugar
85g golden syrup
95g treacle
1 egg yolk
360g flour
1/2 tsp salt
3/4 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground cloves
1 tsp ginger
1 tsp ground nutmeg
Method
Cream butter and sugar
Add golden syrup, treacle, and egg yolk, and beat until combined.
Sift flower, salt, baking powder, baking soda,and spices
Add sifted ingredients to butter mixture and combine
Mould dough into flat disc shape, wrap in cling wrap and place in the fridge for 45 minutes
Preheat oven to 175 C
Roll dough on lightly floured surface to 4-5mm thickness and cut into desired shapes.
Bake for 13-15 minutes until golden, and slightly darker around the edges
Cool on a wire rack
Store for up to 2 weeks.
