Family meals - Beef Lasagne
Lasagne is one of those great family meals, and because everyone loves it, it is also the standard meal to give to a family when they need a meal when there is sickness or a new baby or the like. However, I have had friends who have been given five nights of lasagne by five different people so it is good to have other options in the repertoire too!
This is our standard lasagne recipe adapted from one in the Australian Women's Weekly Minced Meat cookbook.
1 onion, chopped
2 cloves garlic, finely chopped
750g minced beef
750 ml bottle of passata
1/4 cup of tomato paste
1/4 cup of dry red wine
1/4 cup of fresh basil
Heat pan on a high heat. Add oil, then onion, garlic and mince and stir until well browned. Stir in all other ingredients except basil and bring to boil. Simmer, uncovered until sauce is thick. Take off heat and add basil.
2 1/2 tablespoons flour
2 cups milk
1/2 cup cream
1 cup grated tasty cheese
1/4 teaspoon ground nutmeg
Melt butter, stir in flour, stir over heat until mixture is dry and grainy. Remove from heat, and gradually stir in warmed milk. When stirred in and lump free add cream, and return to heat and stir until sauce has thickened. Remove from heat and stir in cheese and nutmeg.
500g instant lasagne sheets
1/2 cup grated parmesan cheese
Spread one third of meat sauce over base of greased 23cm lasagne dish. Top with one third of pasta sheets and one third of cheese sauce. Continue layering, ending with cheese sauce. Sprinkle with parmesan and back in 180 C oven for about an hour.

30 g of butter2 1/2 tablespoons flour
2 cups milk
